2-4 pound pork loin roast, boneless
1 tablespoon paprika
3 tablespoons fresh parsley, snipped (OR 2 teaspoons, dried)
1/2 teaspoon fresh oregano, snipped (OR 1/4 teaspoon, dried)
1/4 teaspoon fresh tarragon, snipped (OR 1/4 teaspoon, dried)
1/4 teaspoon fresh thyme, snipped (OR a pinch, dried)
Mix together all herbs and paprika. Coat roast surface with herb mixture. Roast in a 350 degree F. oven for 40 minutes - 1 1/4 hours (about 20 minutes per pound), or until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes slicing to serve.
Back to the basics. Experiment with a variety of herbs from the garden to make your family's favorite combination. If you don't have fresh herbs, dried work as well. Serve with Dilled Peas and Potatoes Vinaigrette, Four Fruit Salad, and hard rolls.
