1 14 1/2 oz can chicken broth
1 15 oz can Mexican-style chopped tomatoes
1 15 oz can pinto beans, drained and rinsed
2 teaspoons chili powder

In deep saucepan, brown pork with onion; stir in remaining ingredients, bring to a boil, lower heat, cover and simmer 10-15 minutes.

Great Idea

 First time we made this the whole family loved it even my husband who isnt a big fan of beans. I lost the recipe and searched until i found it again b/c i love it quick and eazy family favorite. I use a little more chilli powerder for more family and when able marginate the pork chops in the broth overnight.

Such an easy recipe. I made for friends and it was ready before the corn muffins were. Different Mexican tomatoes area on the market so you can use mild to extra hot. I liked it with drained black beans. Next time going to add some smoked paprika as well.
