Cajun Pork Roast

FOR ROASTS, CHOPS and TENDERLOINS

Cook to 145 F with 3 minute rest

Ingredients

2 pound pork loin roast, boneless
3 tablespoons paprika
1/2 teaspoon cayenne pepper
1 tablespoon garlic powder
2 teaspoons thyme
2 teaspoons oregano
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon cumin
1/4 teaspoon nutmeg

Cooking Directions

Combine all seasonings and rub well over all surfaces of roast. Place roast in shallow pan and roast in 350 degree F. oven for about 40 minutes, until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes before slicing.

Serves 6

For ideal results, test doneness with an instant-read thermometer. This will help take the guess work out of your cooking and ensure that the roast is tender and juicy. Serve with roasted new potatoes and Orange & Onion Salad.

 I took this recipe out of a magazine 10+ years ago, I make it often. It's a family favorite and a crowd pleaser. Make it with swer potatoes or yams.
