Grilled Pork Chops with Basil-Garlic Rub

FOR ROASTS, CHOPS and TENDERLOINS

Cook to 145 F with 3 minute rest

Ingredients

4 bone-in ribeye (rib) pork chops, 3/4-inch thick

Basil-Garlic Rub:

2 cloves garlic, peeled
1 cup fresh basil, packed
2 tablespoons lemon juice , fresh
2 tablespoons extra-virgin olive oil
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper

Cooking Directions

With machine running, drop garlic through feed tube of food processor to mince. Stop, add fresh basil, and process until chopped. Add lemon juice, oil, salt, and pepper and process to make thin wet rub. Spread both sides of pork chops with basil mixture. Let stand 15 to 30 minutes.

Prepare a medium-hot fire in grill. Brush the grate clean and oil the grate. Grill chops, over direct heat, turning once, to medium rare doneness, 5 to 6 minutes per side, or until the internal temperature reaches 145 degrees Fahrenheit, followed by a 3-minute rest time.

Makes 4 servings

Serving Suggestions

Top the chop with shavings of Parmesan cheese (shave from a wedge of cheese with a vegetable peeler) and toasted pine nuts, if desired. Serve with slices of ripe tomatoes and mozzarella on a bed of arugula drizzled with balsamic vinegar and olive oil or with the Pantry Basil-Garlic Rub.

About the Cooking Method: Grilling

There are two ways to grill pork based on the size of the cut:

  • Direct heat, where food is placed directly over the heat source, is ideal for small cuts like kabobs, tenderloin, burgers and chops.
  • Indirect heat, where food is placed on the grill rack away from the coals or gas burners, is good for large cuts like loin roasts, ribs, shoulder and fresh ham.

COOKING BASICS:
Direct Heat

Arrange hot coals evenly on the fire grate of the grill or use all gas burners. Place pork directly above the heat source. Follow suggested cooking times, turning once during cooking.

Indirect Heat

Bank hot coals on both sides of the fire grate, on one side of the grill or in a ring around the perimeter. For gas grills, pre-heat and then turn off any burners directly below where the food will go. Place pork on the grill so it is not directly over any coals or gas burners and close grill hood. Follow suggested cooking times until pork is done. The heat circulates inside the grill, so turning the pork is not necessary.

 This is my kind of recipe, all the flavors I like. I did let it sit in fridge for a few hours, rather than just 15-30 minutes, I like my food well marinated. Thanks for a delicious rub, well, not much of a rub, a bit runny but I made it work. I put some on one side with a spoon, flipped it over, put on top, put in a pie plate to marinate and covered with plastic wrap

Made with boneless center cut chops that were a bit thinner than chops in recipe. Had more rub than needed for the thinner chops. They tasted great. If you don't like the taste of basil, skip this recipe.

 I made these for lunch today with fresh basil from my garden!! Such a fresh taste!!
