2 pounds Pork Loin, cut into 1-inch cubes, trimmed
1 yellow onion, chopped
1 red bell pepper , chopped
1 cup long, thin beans, OR string beans, cut into 1-inch lengths
1 cup Sweet Thai chile sauce, (like May Ploy or Thai Kitchen)
1/2 cup chicken broth, reduced-sodium
1/2 teaspoon salt
1/4 cup water
1 tablespoon basil leaves, torn
1 tablespoon mint leaves, torn
1 tablespoon cilantro leaves , torn

Combine all ingredients except fresh herbs and cook at low for 4 to 5 hours (or on high for 2 to 2 1/2 hours). 

Just before serving, add fresh herbs and check seasoning. Transfer pork and sauce to a serving bowl. Serve over rice or Asian noodles.

Makes 8 cups or 8 servings

Loved, loved, this recipe. I enjoyed it so much I learned to make sweet thai chile sauce and gave jars of the sauce to family and friends (with this recipe...of course!)
Buying/Handling/Storing Tip:

Loin roast is sometimes confused with tenderloin. Despite the name similarity, they are not one in the same. A loin roast is typically sold in pieces weighing between 2 to 4 pounds (the tenderloin is a smaller, long cut that usually weighs about a pound). The term roast simply refers to a large cut of pork.

Ask Your Butcher

For a crisp surface on your roast, be sure the oven is fully preheated before place the roast in it and do not cover the meat while roasting.
